5 favorite vegetarian recipes

I’ve been eating vegetarian for a little over a month now (thanks in part to reading Eating Animals and The Omnivore’s Dilemma) and am trying some new recipes. Here’s five of my current favorites:

  1. Thai Pineapple Fried Rice


My take: caramelized pineapple is amazing – who knew?!

2. Margherita pizza


My take: Use a pizza stone if you have one, if not get the oven as hot as you can and make sure the crust is thin.

3. Veggie Lo mein


My Take: I used whatever veggies I had –¬†onions, peppers, broccoli, snap peas, carrots etc. And made extra sauce.

4. Buffalo Roasted Chickpeas


My take: I threw in some scallions and breadcrumbs as I was roasting the chickpeas and skipped the dressing. I put it on a sandwich with spinach and melted cheese. So good!

5. Toasted Cheese Ravioli

My take: Not as healthy as the rest, but a good treat!
